Grandma's Famous Cucumber Salad

Grandma's Famous Cucumber Salad


(In loving memory of my Grandmother who always made this side dish whenever there was a family gathering.  She would slice the cucumber by hand and you could see right through each slice.  She was an amazing woman)


Ingredients:
Cucumbers
Salt
Lime juice

Grandma would always peel the cucumber before grating it, but through the years I have left the skin on as my kids don't seem to mind and there is more nutrients in the skin.

Take your washed cucumber and grate it using a grater (the largest slice section)
Once grated, add the juice of 2 limes or 4 - 5 tbsp of lime juice from a bottle.  Fresh lime is ideal, but I didn't have any on hand.

Afterwards, add 2 tsp of salt (approx.) it should be salty ;-)  As my Grandmother would always say, you can never have enough salt.


Orange (or Grapefruit) Ground Chicken

Orange (or Grapefruit) Ground Chicken


Ingredients

  • 2 pound ground chicken
  • 2 tablespoons ginger root minced
  • 1 large chopped onion
  • 1 red and 1 yellow chopped bell pepper
  • 3 teaspoons garlic minced
  • 1/2 tsp hot red chili pepper crushed
  • 4 tablespoon rice wine or red or white wine
  • 4 tablespoons water
  • 3 teaspoon sesame oil
  • 6 teaspoons soy sauce
  • 7 tablespoons sugar
  • 5 tablespoons white vinegar
  • zest of 1/2 orange or grapefruit and 1/2 grapefruit or orange juice
  • 1 tablespoon water

    • 1 tablespoon cornstarch
    • ~~~ Brown the Ground Chicken with 2 tbsp oil
      Once the chicken is cooked add the  onion, ginger, garlic and crushed red pepper and cook for about 10 seconds
      To make the sauce combine the wine, water, sesame oil, soy sauce, sugar, white vinegar, and orange or grapefruit zest with 1/2 of the juice
       
      Add the sauce and bring to boil.
      Add the cornstarch mixture to the pan and cook for just a few seconds, stirring until it thickens then add the chopped bell peppers



      As an accompaniment I made my Grandma's famous cucumber salad so as to cool the heat of the dish.  See my salads and others page.

    Polish Chrusciki

    500 ml sour cream
    1/2 Cup Sugar
    3 Eggs
    3 Egg Yolks











    Mix above



    Then add:
    1 heaping Tsp baking powder
    2 Tbsp alcohol spirutus (90 % alcohol proof)
    Combine with the above mixture

    Then add approx. 5 + cups of flour
    Dough should be like bread but not as dry
    Fold dough over and over on floured surface

    Cut into 3 blocks 1 cm
    Cut into rectangles with a cut in the middle



    Put one end through slit



    Heat oil 1 - 2 inches deep
    Place in oil and toss

    Sprinkle with icing sugar
