Grandma's Famous Cucumber Salad
(In loving memory of my Grandmother who always made this side dish whenever there was a family gathering. She would slice the cucumber by hand and you could see right through each slice. She was an amazing woman)

Ingredients:
Cucumbers
Salt
Lime juice
Grandma would always peel the cucumber before grating it, but through the years I have left the skin on as my kids don't seem to mind and there is more nutrients in the skin.
Take your washed cucumber and grate it using a grater (the largest slice section)
Once grated, add the juice of 2 limes or 4 - 5 tbsp of lime juice from a bottle. Fresh lime is ideal, but I didn't have any on hand.
Afterwards, add 2 tsp of salt (approx.) it should be salty ;-) As my Grandmother would always say, you can never have enough salt.

Hummus
1 Can chick peas with water
1 Can chick peas with NO water
3 garlic cloves
1 1/2 Tbsp Tahini
1/2 Tsp Salt
2 Tbsp Lemon Juice (must be from real lemons or it just won't taste good)
2 Tbsp oil

Cold
Macaroni salad
Mix the
below ingredients
1 cup
mayonnaise
2 ½ tbsp
mustard
2/3 cup
white sugar
¼ cup white
vinegar
½ tsp black
pepper
1 ½ tsp salt
Stir in the
below ingredients into the wet ingredients above
¼ cup carrot
2 Stalks
Celery
1 red pepper
1 onion
½ cup Dill
pickles

Cook
macaroni then mix with all the above
4 cups macaroni

2 Cups drained canned Tuna
1 lemon (juice)
3 stalks celery
1/2 small/med onion chopped
2 Tbsp Capers
1 Tsp Dill
1 1/2 cup mayonnaise
2 Tsp Dijon mustard

1 lemon (juice)
3 stalks celery
1/2 small/med onion chopped
2 Tbsp Capers
1 Tsp Dill
1 1/2 cup mayonnaise
2 Tsp Dijon mustard

Hawaiian Macaroni Salad
Salted water
1 lbs of macaroni
Boiled for 15 minutes
Dressing:
2 cups milk
2 cups mayonnaise
1 tbsp brown sugar
2 tsp black pepper
1/2 tsp salt
*mix and place 1 cup of dressing aside
Drain pasta
1/2 cup apple cider vinegar add to dry pasta
Then mix dressing to cooled pasta
Chop 4 scallions
1 grated carrot
1 stalk chopped celery
Add vegetables to pasta and mix everything and refrigerate for at least 1 hr
Then add the 1 cup dressing and mix
Season to taste..salt and pepper
