Delicious protein fluffy pancakes

Ingredients:

1 1/2 cup Almond or dairy milk
4 tablespoons white vinegar

2 cup all-purpose flour
1/2 cup whey protein powder
4 tablespoons white sugar
1 tbsp flaxseed (ground not whole)
2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt

2 egg
2 tablespoons olive oil

Directions:

Combine milk and vinegar and let stand for 10 minutes
(I usually do this in a measuring cup large enough for all wet ingredients, so I'm not dirtying lots of dishes)

Combine and mix all dry ingredients


After the vinegar has stayed in the milk for 10 minutes, I add the egg and olive oil then mix


Then combine everything together, be sure not to over mix.  If you find that the mixture is too thick, just keep adding the almond (or dairy) milk till it thins out a bit.  You will still get fluffy pancakes

Eggs

Soft Boiled = Boiling water and eggs - 4 1/2 minutes
Hard Boiled = 12 - 15 min (longer if extra large eggs)
Poached = Skillet with 1 inch of water and vinegar, bring to a gentle simmer
Crack eggs into water and spoon water over eggs until all white
Scrambled eggs - For fluffy eggs add milk or water

2 Lg Eggs
1/2 Cup water
1/2 Cup and 2 Tbsp Milk
1 Cup Flour
1/8 tsp cinnamon (optional)
pinch salt
1 ounce unsalted butter

Apples, water, sugar

INGREDIENTS

2 cups flour
4 teaspoons baking powder
1⁄2 teaspoon salt
1⁄4 cup sugar
2 eggs
1⁄2 cup vegetable oil
2 Almond milk
1 teaspoon vanilla

  • Oil the waffle maker.
  • Sift the dry ingredients together in a large bowl.
  • In separate bowl, separate egg whites and beat until stiff peaks form.
  • In a separate bowl, mix together the egg yolks, milk, oil , and vanilla, stir slightly.
  • Add to dry ingredients and mix well.
  • Fold in egg whites.
  • Cook in waffle iron on medium-high heat for around 5-10 minutes.
