4 Eggs
1/2 Cup Water
1 Cup Almond Milk
1 Cup Flour
1 Tsp Salt
4 Tbsp Melted Butter
~~ mix the above and let sit for 30 minutes. I usually use a blender to mix the above so that it is smooth.

After 30 minutes pan fry enough to make individual crepes

Although you can use any filling, my mother in law would crush up dry cottage cheese curd with vanilla yogurt (this is the healthy version)

Take the individual crepes and fill them, wrap them and then sprinkle with icing sugar

Racuski
1 Cup Milk
1 Tsp Salt
1/2 Cup Sugar
* Mix above and mirowave till warm



Add a large cube of yeast and mix with warm mixture above
Add the below to the above and mix till dough is sticky
4 Tbsp Oil
3 Eggs
3 - 4 Cups flour
2 Tsp spirits (optional - this is so the dough doesn't absorb too much oil when being deep fried)
4 Tbsp Corn flour (optional)
Let rise for 30 - 40 minutes



Bring 1 inch of oil to heat - not boil, then turn down heat
Dip spoon in hot oil then scoop dough in oil, turn over when side is brown

Kopytka (Hoofs)

Mashed potatoes or cottage cheese
2 Eggs
3 Tbsp Kartoflanka (potato flour)
1 Tsp Salt
1 Tbsp Oil
1 1/2 Cup Flour
Mix into ball
Roll out, layer onto itself and keep it 1-2 cm thick
Cut dough into long strips
Cut each strip into pieces at an angle
Place in boiling water with 1 tsp salt and 1 Tbsp oil
Boil for 10 min and sit for 5 minutes

Polish Fruit Soup

2 Eggs
dash salt
1/4 Cup Almond milk
1/2 Cup flour

Mix above; should be like pancake batter but thicker and smooth to make dumplings
Cube 5 apples and add 2 cups whole pitted prunes - bring to a boil

Then drop batter in water to make dumplings
Add sour cream or plain yogurt to thicken
Add sugar to taste

Makowiec (Poppy Seed Cake)
100 gram Yeast
1 Cup Almond Milk - warm then add yeast and mix
1 Cup Sugar
1/2 Tsp Salt
1 Egg
3 Egg Yolks
1/2 Cup Oil
Filling:
3 lbs of poppy seed
Almonds
Walnuts
Dates
Raisins
Boil in water and let sit then grind through meat grinder
Then add 2 eggs and 1 Cup sugar
Roll dough out and spread filing then sprinkle coconut and roll
Bake at 350 for 40 minutes
Remove from oven and sprinkle with icing sugar

Polish Chrusciki
500 ml sour cream
1/2 Cup Sugar
3 Eggs
3 Egg Yolks

Mix above

Then add:
1 heaping Tsp baking powder
2 Tbsp alcohol spirutus (90 % alcohol proof)
Combine with the above mixture
Then add approx. 5 + cups of flour

Dough should be like bread but not as dry
Fold dough over and over on floured surface

Cut into 3 blocks 1 cm
Cut into rectangles with a cut in the middle

Put one end through slit


Heat oil 1 - 2 inches deep
Place in oil and toss

Sprinkle with icing sugar

1 Cup sugar
3 Tbsp Water
1/2 Cup oil or more
5 Eggs
Combine and mix
4 heaping Tbsp potato flour
2 Tsp Baking Powder
Mix with above
1 Cup flour - mix and consistency should be runny and silky
Pour in steamed cake pan that has been buttered and dusted with cornmeal and lock with lid
In big pan bring water to boiling point
Place cake in pan - boiling for 1 minute
Reduce head to minimum heat (3) for 1 hour
Water level must be 1/2 way to tin. Tin cannot float

Kluski (Potato Dumplings)
6 Potatoes
2 - 3 onions
blend in food processor
1 Tbsp oil
3 Tsp Salt ++
1 Egg
4 Cups flour
Mix in above mixture
Dough should be sticky in a clump (moisture than bread dough)
Bring water and 3 Tsp salt to a boil
Place dough on cutting board
When water boils, cut the dough with a spoon (small tiny amounts) rapidly in the water
Place spoon in water each time doughs placed in the water
Turn heat off and stir for 2 minutes
Pour cold water into pan and stir
Drain in colindar

Donuts (Mamusia's Bakes) - Racuszki
1 Cup Almond milk - warm
4 Tbsp Sugar
1/2 Tsp Salt
2 Tbsp yeast - mix in with the above ingredients
3 Eggs (2 or 3 eggs) yolks only sometimes
1 Tbsp oil
1 Tbsp rum (Dbl proof)
3 Cups flour till thick but sticky
Mix all above and let sit for 45 minutes
Spoon a heaping Tbsp at a time in a large pan of oil (1 inch high)
They expand so don't put too many in the pan at once
Remove after 2 - 3 minutes per side
Sprinkle icing sugar immediately after you remove them

1 Cup warm milk
1 Cube yeast (I use the fresh yeast from the store bakery)
2 Tbsp sugar
Mix together

1 Tsp Salt
7 Tbsp Oil
3/4 - 1 Cup Sugar
3 Egg yolks
1 Egg
Mix together

Mix both mixtures
You can also add
1/4 Cup raisins
1/4 Cup coconut
1 Tsp vanilla essence

3 - 4 Cups flour until sticky dough ball
Allow to rise
Once risen put in baking dish and push fruit into dough at the top
Fruit could be; Apples, prunes, plums, cherries, Rhubarb)
If using Rhubarb first microwave it with sugar. In my pictures below I used black currents from our garden that we had frozen since last year. I was sure to toss them with sugar before adding them to the top.



Topping
3/4 Cup Sugar
1/2 Cup Butter
3/4 Cup Flour
Mix together (should be crumbly). Then sprinkle the top



Bake 20 - 25 minutes at 325 when brown turn off. Because my black currents had a lot of juice in them, my cooking time was doubled. Just make sure to use a tooth pick to check.

4 Stalks of celery
4 Carrots
4 Tbsp of Fresh Ginger
1 Onion
M Medium/Large Beets with stem and leaves
In a pot of water, boil any meat/bones
- Pork bone, Turkey bone etc.
Remove bone then take all the meat off the bone and add the meat back to the water

Add all the vegetables to the water
Then add the below seasonings:
1 Tbsp Cumin
2 Tsp Salt
1 Tsp Cayenne Pepper
1/2 tsp chili flakes
1 Tsp Garlic Salt
1 Tsp Cracked Pepper
1 Tsp Chili powder
1 Tsp Roasted Garlic pepper

Cube two steaks and add to the above
Bring to a rolling boil for 10 min then lower heat continuing to boil for 1 1/2 hours
Then add:
4 Tbsp white vinegar
4 Tbsp Olive oil

~~ Taste and adjust seasonings
Optional additions:
Sugar and sour cream
