Pineapple Corn Bread
First combine all dry ingredients into a large bowl:
2 cups All Purpose Flour
2 cups Yellow Cornmeal
1/2 cup Sugar
8 tsp Baking Powder
1 1/2 tsp Salt
Second combine all wet ingredients together in a separate container:
2 cups Almond milk (or regular milk)
1/2 cup Melted Butter
4 Eggs
Directions:
Combine Wet and dry ingredients. You can combine with or without an electric beater, but don't overbeat.
Bake at 425 F degrees for 20 - 25 minutes
Notes:
You can half this recipe.
You can add a can of cream of corn and/or corn or pineapple tidbits, but just add to the cooking time.

Braided Cheese Bread
Ingredients:
1 Cup Buttermilk
1 Tbsp Butter
1 Cup Warm Water
2 Tbsp fresh yeast
2 Tbsp Sugar
2 Tsp Salt
1 Cup Cheddar Cheese
5 Cups flour
Warm milk and butter until butter is melted. I just do this in the microwave for convenience.
Warm water and dissolve yeast. I use fresh yeast, but you can use dry yeast.
Combine all the liquid above and add sugar and salt
Add 2 Cups of Flour and mix until dough is smooth consistency
Add 1 Cup of Cheese and mix. You can use any cheese. I prefer grated cheddar cheese. As well, if you want a more cheesy flavour, add more cheese.
Add remaining Flour and knead gradually until a soft firm ball forms
Allow the ball of dough to rise for 1 hour
After 1 hour divide ball into two balls
Then take each ball and divide into 3 equal parts that you roll out into three separate logs
Take the three separate logs and press together on one end, then braid and press together at the end
Place Braided dough on a baking sheet lined with parchment paper, sprayed with oil and dusted with cornmeal and allow to rise for 1/2 hour
Bake 375 F for 40 minutes

Banana Dark Chocolate Walnut Bread
4 Cups Flour
2 Cups Grated cheese is added to all the above and mixed.

Bake at 375 F for 25 minutes.
If your batter was too wet it will take longer.

Wet Ingredients:
6 Mashed Bananas
1 Cup Apple Sauce
1/2 Cup Oil
1/2 Cup Almond Milk

Bake at 350 F for approx. 55 minutes

Beer Cheese Bread
Combine dry ingredients:
6 Cups Flour (White or whole wheat)
2 Tbsp Baking Powder
6 Tbsp Sugar
2 Tsp Salt
2 Tbsp Baking Powder

Once you have mixed the above, then you can combine the below OPTIONAL items (Any seasonings you want, I just add whatever I have at hand). I used:
Cayenne pepper
Cumin seeds
Oregano
Garlic Powder
Tumeric
No salt seasoning
Pumpkin seeds
Combine with Dry ingredients and mix

Combine with Dry ingredients and mix
Now it's time for the Beer. You can use any Beer you want as I have done this recipe numerous time with Ale, Stout, Pilsner etc.
3 Cups approx. Beer combines with the dry ingredients. I never measure the amount of Beer as you have to put enough that the mixture is wet but not too wet.
As this is a doubled recipe I split the batter into 2 buttered (or sprayed) then floured dishes

Bake at 375 F for 25 minutes.
If your batter was too wet it will take longer.

Johnny Cakes
2 Cups Flour
2 Tbsp Sugar
1/4 Tsp Salt
1 Tbsp Baking Powder
2 Tbsp Margarine
1/2 Cup Cooking oil
1/2 Cup Almond milk
Mix all ingredients except milk, until the butter blends in with the flour evenly
Add a little milk at a time, until a firm dough is formed
Divide dough into balls (about a Tbsp in size each). Knead each one from the outside in 1/2 a minute.
Press gently with hands and fry in oil.
Drain and serve hot

1/2 Cup Olive Oil
1 1/2 Cup Buttermilk

<Above> Cut up the cold butter into small pieces and use a fork to press the butter and mix it in the dry ingredients

Make each dough ball into a circle with one inch thickness
Cut into wedges like a pizza (each ball should have 8 triangles)
Brush the top of each scone with buttermilk
Bake at 425 F for 20 min or until brown

Oatmeal Raisin Buns with Jelly in the middle
Combine the below and let sit for 5 minutes.
2 Cubes Yeast
3 Cups of warm Buttermilk
(I use fresh yeast that I buy from the bakery, but you can use dry yeast)
Combine the below ingredients:
1 Tsp Salt
3/4 Cup Sugar
3 Cups Oatmeal
1 Cup raisins
Combine the below:
3/4 Canola Oil
4 Eggs
Mix all the above mixtures together and then start combining the flour.
7 Cups flour (approx.)
Mix and let rise for 2 + hours
Make into balls and put jam in the middle and dust the ball with flour. Use a jam paste or hard jelly as regular jam will burst during baking. I use Guava paste/jelly (not shown).
Bake at 350 for 20 - 25 or until brown and dust with icing sugar

Tomatoe Olive Focaccia
3 2/3 Flour
5 Tsp yeast
1 Tsp Sugar
5 Tsp yeast
1 Tsp Sugar
Mix the above in a mixer with the dough handle
Add 2 cups cool room temperature water - mix for 5 minutes. Wait 10 minutes then add 2 Tsp salt and mix for another 5 minutes.
Add 2 cups cool room temperature water - mix for 5 minutes. Wait 10 minutes then add 2 Tsp salt and mix for another 5 minutes.
2 Tbsp olive oil - place in large bowl
Add dough and with the oil in the bowl sprinkle some oil ontop of the dough so it doesn't dry out

Let the dough rise for 5 - 6 hours
In a non stick pan add 2 Tbsp olive oil
Add dough and spread dough in dish
Topping:
Cut green olives and cut crushed grape tomatoes and let sit for 20 minutes to rise
Cover with 2 Tbsp of olive oil
Sprinkle;
1Tsp dried oregano
3/4 tsp pepper
3/4 tsp salt
Bake at 500 degrees for 20 minutes

Italian Prosciutto Bread
3 oz each of:
Prosciutto
Pepperoni
Hot dog
Cheese
Cube all the above
Dough:
3 cups flour
1 1/2 tsp instant yeast
1 tsp salt
* mix above
Then add
200 - 250 ml lager room temp
6 tbsp of water
3 tbsp extra virgin olive oil
* mix on low till incorporated with dough handle. Then mix on medium speed for 8 minutes.
Then add all the meats and cheese as well as 1 1/2 tsp black pepper.
Mix on low for 2 minutes
Knead by hand and shape into ball and move to greased bowl and let rise for 1 1/2 hours.
Divide dough in half to make two loafs. Shape into baguettes style loaves by doing the following:
8 x 5 rectangle
Then take top and fold half way and do the same with the bottom
Then flip over and roll to 12 inch log
Move to cornmeal dusted pan
Let rise for 45 minutes
Cut vertical slash down the middle
Bake at 450 on middle rack for 25 minutes or until internal temp. approx. 205 f
Zucchini pineapple bread
Dry ingredients:
4 cups flour
1 1/2 tsp cinnamon
3/4 tsp nutmeg
1/4 tsp all spice
1 tsp Salt
1 tsp Baking powder
2 tsp baking soda
*mix
Wet ingredients:
1 1/2 cup sugar
3 eggs
2 tsp vanilla essence
1 cup vegetable Oil
* mix
2 cups grated zucchini (2 small zucchini's) and then add to wet ingredients
1 can 8 oz crushed pineapple
** mix dry and wet ingredients
1 cup raisins mix
Don't over mix
Makes two loaves
Bake at 350 degrees for 50 minutes
