Tuna Casserole
4 Cups Macaroni
1 can cream of celery soup
1/3 cup almond milk
1/4 cup mayonnaise
1 tsp dry mustard
2 cup shredded cheddar cheese
2 cans water soaked tuna - 1 can with liquid
Topping;
1/2 cup breadcrumbs
2 Tbsp butter
1 tsp paprika
Directions;
Cook pasta
Combine all ingredients adding tuna and cheese last
Mix topping then sprinkle untop
Bake for 45 min at 350 degrees

Asian Steak Bites
Ingredients
- 1 3/4 pounds flank steak
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon chili paste
- 1-2 tablespoons light flavored olive oil
Instructions

Slice the steak across the grain into strips 1/2" wide. Cut each strip into bite-size pieces, approximately 1/2" - 3/4" in size. Place the chunks of beef into a medium size bowl. Stir together the soy sauce, honey, and chili paste. Pour over the beef and stir to coat well. Let the meat marinate for 20-30 minutes.

Heat a heavy bottom stainless steel pan or wok over medium high heat. When the pan is hot, add 1 tablespoon of oil and swirl to coat. Add 1/3 of the meat to the pan and spread out in a single layer. Let it cook for about a minute, until the meat has browned. Flip the meat or toss with a spatula for an additional minute or two as it finishes cooking. Remove the meat from the pan to a plate.

Sesame Ginger Salmon;

Ingredients:
- 1/4 cup olive oil
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons sesame oil
- 2 tablespoons brown sugar
- 2 cloves garlic, pressed
- 1 tablespoon grated fresh ginger
- 1 tablespoon sesame seeds
- 4 green onions, thinly sliced
- 4 (5-ounce) salmon filets
Directions:
- To make the glaze, whisk together honey, soy sauce, sesame oil, Sriracha, ginger and sesame seeds in a small bowl; set aside.
In a medium bowl, whisk together olive oil, soy sauce, rice vinegar, sesame oil, brown sugar, garlic, ginger, sesame seeds and green onions.
In a gallon size Ziploc bag or large bowl, combine ginger marinade and salmon filets; marinate for at least 30 minutes to overnight, turning the bag occasionally.
Preheat oven to 400 degrees F. Lightly coat a 9×13 baking dish with nonstick spray.
Place salmon filets along with the marinade onto prepared baking dish and bake until the fish flakes easily with a fork, about 20 minutes.

Orange (or Grapefruit) Ground Chicken

Ingredients
- 2 pound ground chicken
- 2 tablespoons ginger root minced
- 1 large chopped onion
- 1 red and 1 yellow chopped bell pepper
- 3 teaspoons garlic minced
- 1/2 tsp hot red chili pepper crushed
- 4 tablespoon rice wine or red or white wine
- 4 tablespoons water
- 3 teaspoon sesame oil
- 6 teaspoons soy sauce
- 7 tablespoons sugar
- 5 tablespoons white vinegar
- zest of 1/2 orange or grapefruit and 1/2 grapefruit or orange juice
- 1 tablespoon water
- 1 tablespoon cornstarch
o make the sauce combine the wine, water, sesame oil, soy sauce, sugar, white vinegar, and orange or grapefruit zest with 1/2 of the juice


Add the sauce and bring to boil.
Add the cornstarch mixture to the pan and cook for just a few seconds, stirring until it thickens then add the chopped bell peppers

As an accompaniment I made my Grandma's famous cucumber salad so as to cool the heat of the dish. See my salads and others page.

Cream of Corn Casserole
(Ingredients for 2 casseroles)
Dry ingredients
- 1 Cup and 2 Tbsp Flour
- 1 Cup Cornmeal
- 4 Tbsp Sugar
- 2 Tbsp Baking Powder
- 1 Tsp Salt
- ~ Mix the Above
- Wet Ingredients

- 2 Can Corn bites
- 2 Can cream style corn
- 500ml Cup sour cream
- 4 Eggs, Beaten
- 1 Cup butter melted
- ~ Mix the above


- Combine both mixtures and bake at 350 for 55 - 60 minutes

Green Lentil Stew

- Soak lentils overnight (4 Cups Lentils with 6 cups water)

- Then drain the lentils and add 5-6 cups of fresh water and bring to a boil
- Add garlic, ginger, coriander powder (or parsley flakes), turmeric, bay leaf and a tsp of salt etc.
Let it simmer on low heat for 2-3 hours
- Add 1.5 cups of milk in it, and let it simmer for another ½ hour. Add salt as desired.
Fry onions, cumin seeds etc. in olive oil. When browned, add the mixture into lentils, add salt to taste.

- Garnish with cilantro
Penne Carbonara
Ingredients;
1. Penne pasta
2. Mozzarella Cheese
3. Sausage/meat of some kind
4. Onion and Garlic
5. Buttermilk
6. Parmesan Cheese
7. Ground black pepper
8. Parsley
9. Green onion
10. 3 eggs
Chop up One large onion and a head of garlic
Sauté in Oil until cooked
Below: Chop up meats. I had beef hot dogs and sausage on hand, so that is what I used.
Toss the meat with the onions and cook until meat is crispy
In a bowl combine and mix;
3 Eggs
4 Cups Buttermilk
1/2 Cup Parmesan Cheese
3 Cups Mozzarella cheese
Ground black pepper (1 tsp)
4 Cups Buttermilk
1/2 Cup Parmesan Cheese
3 Cups Mozzarella cheese
Ground black pepper (1 tsp)
Then add above mixture to the onion and meat. Stirring until it becomes a thicker consistency, then add 1 Tbsp of parsley
Boil the penne in a separate pan approx. 9 minutes. Don't over cook as it will continue to cook in the cheese sauce.
Then add strained pasta to the cheese sauce and mix. Keep cooking for another 10 minutes.
Garnish with Green onion and you're done.
Crack Noodles
8 oz rice noodles
1 Tbsp vegetable oil
1 small onion
salt
1 1/2 tbsp sesame oil
1/2 cup thinly sliced green onions (reserve some for presentation)
4 cloves garlic, minced
1/3 cup low sodium soy sauce
2 tbsp chili garlic sauce
1 tbsp brown sugar
1/2 tbsp lime juice
pinch red pepper flakes
Cook noodles, drain and set aside
In a large skillet:
Heat oil
Add onions
Add salt
Cook till crispy and place on paper towel
In the skillet add;
sesame oil
Green onions
garlic
cook for one minute then add;
soy sauce
Chili garlic sauce
lime juice
brown sugar
red pepper flakes
Simmer sauce for 3 - 5 minutes
Add noodles and combine, garnish with crispy onions and green onions

Macaroni and Cheese
4 Cups macaroni
6 Tbsp Butter
6 Tbsp flour
4 Cups almond milk or butter milk
1 tsp salt and pepper
3 Cups shredded cheese and some for garnish
Preheat oven to 350 degrees
Cook pasta till just cooked (a little hard)
Melt butter and add flour - cook till brown (1 - 2 minutes)
Add milk, salt and pepper and stir to remove all lumps and cook till thickens (6 minutes)
Stir in cheese and mix till melted
Take off heat
Stir in drained pasta and mix
Place in greased pan
Cook for 40 minutes then add cheese ontop and broil

Creamy Tuna Pasta
Ingredients

1/2 tablespoon olive oil

1 yellow onion, finely chopped

milk, separated

2 and 1/4 cups chicken broth
(low-sodium)

1 package (16 ounces) small pasta
shells

1 tablespoon Dijon mustard

1 large lemon

2 cans (5 ounces EACH) Genova
Albacore Tuna in Olive Oil, drained
·
1 cup frozen peas
·
Salt and pepper
Instructions
1.
In a large nonstick pot (the skillet in
pictures was used only for photos to better show the dish -- use a pot). add in
the olive oil. Turn the stove to medium-high heat and once the oil is
shimmering, add in the onion. Saute for a few minutes and add in the garlic.
Stir until fragrant, about 30 seconds.

Add in 1 cup of the milk, the water, broth,
and UNCOOKED pasta shells. Add some salt and pepper to taste (I use about 1
teaspoon salt and 1/2 teaspoon freshly cracked pepper). Lower the heat and
bring the mixture to a simmer and cook, uncovered, stirring often until the
pasta is al dente (according to package directions) The pasta will continue to
cook a bit over the next few minutes so don’t overcook it here*.

Stir in the remaining 2 tablespoons milk,
Dijon mustard, and 1 tablespoon fresh lemon juice. Add the drained tuna and mix
gently until combined. Season with salt and pepper. Let the pasta rest for
about 6-8 minutes. It will continue to thicken and get nice & creamy. Stir
in the frozen peas.
Add freshly shredded cheddar cheese and fresh
parsley as desired. Or serve without the cheese and with additional lemon as

Easy Baked Chicken
Ingredients
- 1/3 Cup Olive Oil
- Juice of One Lemon
- 2 Teaspoons Garlic Powder
- 2 Teaspoons Onion Powder
- 2 Teaspoons Salt
- 1/4 Cup Soy or Worcestershire Sauce
- 1/4 Cup Brown Sugar
- 1 Teaspoon Black Pepper
- 1 Teaspoon Paprika
- 10 Chicken Drumsticks
Instructions
- In a medium bowl whisk together the olive oil, lemon juice, garlic powder, onion powder, salt, soy or Worcestershire sauce, brown sugar, pepper, and paprika.
- Add the chicken drumsticks to a large zip-top bag and pour the marinade over the chicken. Close the bag and massage the marinade into the chicken for a few seconds.
- Refrigerate the chicken in the marinade for at least 30 minutes. For best flavor allow the chicken to marinate for 2-12 hours.
- Preheat the oven to 425 degrees. Line a large baking sheet with foil and spray with cooking spray.

Imitation Crab Linguine Recipe
Ingredients
- 1 package linguine pasta
- 1/2 cup water
- 1/2 cup onion, diced
- 1/4 cup butter
- 2 tablespoons lemon juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried parsley
- 1 teaspoon ground black pepper
- 1 twelve-ounce package imitation crabmeat, diced
- 1 cup sour cream or plain yogurt
- 1/2 cup mozzarella cheese or cheddar cheese
Directions
Cook the pasta two minutes less that packaged directions then drain.
Bring water, onion, butter, lemon juice, garlic powder, oregano, and pepper to a boil in a pot over medium-high heat. After it begins to boil reduce heat to medium-low. Add the imitation crabmeat and cook for 2 minutes. Stir in the sour cream and mozzarella cheese until combined.
Pour pasta into cream sauce and combine. Serve.

Thai Chicken Lettuce wraps
INGREDIENTS
1 large head iceberg or butter lettuce
3 tablespoons vegetable oil
1 large red onion, chopped
2 tablespoons finely chopped fresh ginger (you'll need a thick 2-inch piece)
3 cloves garlic, minced
2 pounds ground chicken (not all breast meat)
1-1/2 tablespoons soy sauce (use gluten-free if needed)
3 tablespoons fish sauce (see note*)
1/4 cup light or dark brown sugar
2 teaspoons lime zest, from 2 limes
3 tablespoons freshly squeezed lime juice, from 1-1/2 limes
1/2 teaspoon red pepper flakes
2 large scallions, white and green parts, finely sliced
1/2 cup chopped fresh cilantro
1/4 cup chopped fresh mint
1/4 cup chopped cashews or peanuts
OPTIONAL FOR SERVING
Sriracha
Finely sliced carrots
Lime wedges
Cilantro and/or mint sprigs
INSTRUCTIONS
Fill a large bowl with cold water. Place the head of lettuce on a cutting board; cut off the stem, then cut around the inner core of the lettuce and remove (do not cut all the way through the lettuce; just deep enough to remove the core). Discard the flimsy, ragged outer leaves and then place the head of lettuce in the bowl of water. Gently pull apart the leaves, then place them on a paper towel to dry. Cut any large leaves in half. Chill the lettuce cups in refrigerator until ready to serve.
Heat the oil in large sauté pan over medium heat. Add the onion and ginger and cook, stirring frequently, until soft, 4-5 minutes. Add the garlic and cook 1 minute more.
Add the ground chicken and turn the heat up to high. Cook, breaking up the meat with a wooden spoon, until partially cooked through, about 3 minutes. Add the soy sauce, fish sauce, brown sugar, lime zest, lime juice and red pepper flakes and continue cooking, stirring frequently to break up the meat, until the chicken is cooked through, 5-6 minutes more. Off the heat, stir in the scallions, cilantro, mint and nuts. Taste and adjust seasoning if necessary. Spoon into lettuce cups and serve with optional garnishes.

Tomatoe Olive Focaccia
3 2/3 Flour
5 Tsp yeast
1 Tsp Sugar

Mix the above in a mixer with the dough handle
Add 2 cups cool room temperature water - mix for 5 minutes. Wait 10 minutes then add 2 Tsp salt and mix for another 5 minutes.

2 Tbsp olive oil - place in large bowl

LahmaJoun Middle Eastern Meat Pizza
In food processor
1 3/4 cups flour
1 1/2 tsp instant yeast
1 3/4 tsp kosher salt
Blend the above
Then add
3/4 cup Greek yogurt
1/4 cup of water
1 tbsp honey
Mix until turns into a ball. Add a little more water if it's not yet a ball
Take it out and knead slightly
Divide into 2 and set aside for 1 hour
Topping:
In food processor
1 onion
1 tbsp Tomatoe paste
1/4 cup Roasted red pepper
1/2 tsp each Paprika, cumin, red pepper flakes, salt and pepper
Blend above
Then add
8oz ground beef and pulse but not too much
Dough:
Roll out into a rectangle and place on an inverted baking sheet that has been sprinkled with corn meal.
Brush olive oil on dough
Spread 1/2 the meat on each dough leaving a little space around the edges
Place in oven for 9 -12 minutes at temp 400 or longer at a lower temperature
Remove then top with arugula and thinned out Greek yogurt

Vietnamese Noodle Bowl with Grilled Pork
Ingredients
Grilled Pork
- 2 lbs pork shoulder
- 1/2 cup brown sugar
- 2 tbsp fish sauce
- 1/2 tbsp soy sauce
- 3-4 cloves garlic
- 1 tbsp shallots
- ~2 inch lemongrass bottom white part
- 3 tbsp vegetable oil
Noodles
- 7-8 oz dried rice vermicelli noodles
Vegetables and Garnishes
- 1 1/2 cups shredded cucumber
- 1 1/2 cups shredded carrots
- 1/2 cup rice viengar
- 1/2 cup hot water
- 1/4 cup sugar
- A few leaves lettuce
- A handful cilantro
- A handful mint leaves
- 1/2 cup chopped peanuts
- 1 fresh lime
Sauce (Nuoc Cham)
- 1/2 cup hot water
- 3 tbsp sugar
- 2 tbsp fish sauce
- 2-3 tbsp freshly squeezed lime juice or to taste
- 1/4 tsp red pepper flakes or to taste
Grilled Pork
- Remove some of the fat from pork shoulders (but it is not necessary to remove all the fat), and slice pork into thin slices. Bring them into a large ziplock bag.
- Combine and blend the rest of the ingredients listed under "Grilled Pork" in food processor/blender to create marinate, and add to zip lock bag. Make sure pork is evenly coated with marinate. Marinade pork for at least 1 hour, or up to a few hours.
- Grill pork on a grill pan or outdoor grill. Pork can be pan-fried on a skillet as well. Grill under indirect heat (if using charcoal grill), or medium/low heat (if using grill pan, electric grill, or skillet) to make sure the insides of the pork is completely cook. Note that because there is sugar in the marinate, pork will brown/burn quickly on the outside.
Pickled Vegetables
- Bring hot water and sugar (see ingredients under "Vegtables and Garnishes") together in a bowl to dissolve sugar. Add rice vinegar. Stir to combine.
- Add shredded cucumber and shredded carrots to bowl with vinegar miture. Or, if desire, separate vinegar mixture into two bowls and separately pickle cucumber and carrots.
- Press the carrots and cucmber down so that they are completely submerged in the mixture. Pickle for 30-60 minutes.
- Drain vienegar mixture.
Other Vegetables and Garnishes
- Prep/chop the rest of the vegetables and garnishes – lettuce, cilantro, mint leaves, and peanuts. Slice lime into a few wedges.
Noodles
- Cook noodles base on package insutrctions. It's usually cooks quickly! If noodles needs to sit for a while before combining with the other ingredients, rinse them in cold water to prevent them from sticking to each other, continuing to cook and turning mushy.
Sauce (Nuoc Cham)
- Combine hot water and sugar to completely dissolve sugar. Then add the other sauce ingredients. Stir to combine.

SCHWARTZIES HASH BROWNS
2 lbs frozen hash browns or 2 lbs potatoes, fresh, chopped and pre-cooked
2 cups sour cream
2 (10 ounce) cans cream of mushroom soup
1⁄2 cup butter, melted
1⁄4 cup onion, grated (to taste)
1 teaspoon sea salt (to taste)
1 teaspoon pepper (to taste)
2 cups cheddar cheese, grated
1⁄2 cup parmesan cheese, grated (to taste)
Combine all the above except for the parmesan cheese which should be sprinkled on top.
Bake at 350 for 90 minutes
