Jamaican Sweet Potatoe Pudding

Jamaican Sweet Potatoe Pudding

Mix the below
1 Cup Flour
1/2 Cup Cornmeal
1 Tsp salt
1 Tsp baking powder
1 Tsp nutmeg
2 Tsp cinnamon



Chop up Caribbean or Japanese white sweet potatoes (2 - 3 medium) peeled and cubed.  Don't use yam, use sweet potatoe (the potatoe is white inside as seen in one of the pictures below)

In a food processor or a blender, puree potatoes and the below:
1 Cup coconut milk
Vanilla essence
1 1/2 Cup Brown Sugar


Combine wet and dry ingredients above
Add utter and mix
Add 2 Tbsp rum and mix (raisins are optional.  I don't usually add any)

Grease Spring pan or any baking dish.


Bake 1 hr 10 min then remove and top with the Topping then bake additionally for 15 - 20 minutes at 350 F.  Below is a picture of the topping mixture, and then with the topping poured over the pudding/cake after 1 hr 10 min.

1 Cup coconut milk
1/4 cup brown sugar
1/2 Tsp cinnamon

Green Lentil Stew

  • Green Lentil Stew


  • Soak lentils overnight (4 Cups Lentils with 6 cups water)
  • Then drain the lentils and add 5-6 cups of fresh water and bring to a boil
  • Add garlic, ginger, coriander powder (or parsley flakes), turmeric, bay leaf and a tsp of salt etc.

Let it simmer on low heat for 2-3 hours  
  • Add 1.5 cups of milk in it, and let it simmer for another ½ hour.  Add salt as desired.
    Fry onions, cumin seeds etc. in olive oil.  When browned, add the mixture into lentils, add salt to taste.

 

  • Garnish with cilantro

Oatmeal Raisin Buns with Jelly in the middle





Combine the below and let sit for 5 minutes.
2 Cubes Yeast
3 Cups of warm Buttermilk
(I use fresh yeast that I buy from the bakery, but you can use dry yeast)

Combine the below ingredients:
1 Tsp Salt
3/4 Cup Sugar
3 Cups Oatmeal
1 Cup raisins

Combine the below:
3/4 Canola Oil
4 Eggs

Mix all the above mixtures together and then start combining the flour.
7 Cups flour (approx.)

Mix and let rise for 2 + hours
Make into balls and put jam in the middle and dust the ball with flour.  Regular jam will burst while baking so it's best to use a jam paste i.e. guava paste/jelly.

   

Bake at 350 for 20 - 25 or until brown and dust with icing sugar
